I really love Juice.
Between that, and liquid vitamins ( which, by the way, are AMAZING), I really would love to eat nothing else.
But, because that isn't a possibility, I am currently baking an organic chicken with gluten free stuffing!
As a note: I am not a vegan, not that I don't love and appreciate the lifestyle, I just have such major health issues, I can not run the risk of playing with anything protein/mineral/vitamin related.
Stuffing:
Udis ( torn up) .. gluten free bread, but not organic.. we can't win them all. but we sure as hell can try.
1 whisked egg
Diced Organic Onion
1/2 cup organic chicken broth
organic poultry seasoning ( to taste)
1 ounce cubed organic "european style" butter
mix it all together, and what do we get!? Stuffing!
Chicken:
Preheat oven to 350 f
Organic whole chicken
warmed organic "european style butter"
celtic sea salt, unrefined.
Take chicken, clean the bad boy ( or girl) out, mush butter in hands ( this is as gross feeling as it sounds), and then rub all over the chicken. Stuff the chicken with the stuffing mixture and then sprinkle the chicken with sea salt.
Place in pan, cover in foil and bake in oven for one hour, covered, then baste, then take off the "tin foil hat"and place back in oven, baste every 20 minutes or so.
Rhian's rule of thumb: 20 minutes per pound of chicken PLUS 20 minutes.

Hold your breath!
I have a confession.
I am wildly disorganized. To a point of embarrassment... example: on more than one occasion have I forgotten to pay bills, not because I didn't have the money, but because I lost the bill, or forgot, or.. whatever, they are all excuses to mask the fact I can't keep my ducks in a row!
I have stacks of mail in my house, which can lend itself to a sprinkling of paper objects throughout the house, cast as such by my adorable 5 year old Rhys, and my awful kitten, Hades ( named appropriately).
Now add this disorganization to a full time job, full time graduate school, being a full time mommy, and you have my life. Overwhelmed yet? Don't be! Because I'm not. Well, at least not most of the time.
That being said, being gluten free, and choosing to eat organic comes with the painstaking responsibility of planning ahead, and I don't mean plan ahead in the "one meal ahead" sense, I mean the whole week. It is quite frightful.
Thankfully my fiance has dedicated his sweetness to me and helps me sort out my life, and aids in this preparation and the keeping of my fragile sanity.
In the blogs to come, I will share the "plan ahead" way in which I prepare my meals, and will also post some delicious, fast, and easy recipes to help one be successful in alternative eating circumstances.

After Dinner Snack

Hello!
I hope you are all having a happy, shiny day. I am, and, thankfully, I am also stomach-ache free, and have been so for just over a week.
Over two weeks ago, I decided to bite the bullet of "gluten free". It has been a long time coming. My initial diagnosis ( celiac disease) was in 2004, however, since then I have either ignored or digestive-enzymed my way around it.
Until about a month ago.
My hair started to fall out and I was constantly tired. Weird, right? ( note: sarcasm) I had also started to put on weight that I was completely unable to get rid of. Totally upset, party due to my ego/vanity, I went to the doctor who ran a "rainbow" of blood tests. ( a rainbow is a med-savvy way to say everything you can think of). Lo and behold, I have major vitamin deficiencies, most specifically Vitamin D and Vitamin B12 deficiences.
These deficiencies can cause a myriad of health consequences, and both can lead to the almighty feared "C" word. Yuck. Hence the gluten free living. Believe me, it's not always easy. Or fun. Or awesome. Or yummy. But it can be. It will be! I am cooking more, baking more, and exploring more foods.
I say these things not for a pity party, but to bring awareness to this autoimmune disease. More and more individuals are diagnosed with celiac disease or other forms of gluten intolerance on a regular basis, and it is critical to understand this disease and how to live without.
Thus I created this blog. After reading blogs such as glutenfreegirl and glutenfreeonashoestring ( both I highly recommend), I went on a search. I searched for a blog in the Inland Empire dedicated to gluten free recipies, eateries and the like. There were none.
Thus this blog began.
